MEET THE SHEEP

Icelandic sheep are a triple purpose breed. While they are newer to our farm, they will eventually be used for dairy, fiber, and meat. Their fiber is a double coat that we spin together to create lopi yarn, a combination that creates a lightweight and warm fiber that is also water-repellant and breathable. Icelandic lamb is some of the finest meat around and regularly enjoyed by folks who "don't like sheep meat." 2021 will be our first year experimenting with sheep milk. We hope to expand our cheese selection to include aged sheep's milk cheeses such as manchego.
